What Is Natural Wine? A Guide to Modern Greek Natural Wine

Natural wine is one of the fastest-growing movements in the wine world, but what does it actually mean?

Unlike terms such as "organic" or "biodynamic", natural wine has no single legal definition. Instead, it describes a philosophy of winemaking that aims to intervene as little as possible, allowing the vineyard, the grape and the vintage to shape the finished wine.

While every producer has their own approach, most natural wines share a number of common principles:

• Grapes grown with sustainable, organic, biodynamic or regenerative farming practices.

• Hand-harvested fruit.

• Fermentation using naturally occurring (wild) yeasts.

• Little or no fining or filtration.

• Minimal additions in the cellar, including very low levels of sulphur.

  
  

The goal isn't to make wines that all taste the same. Quite the opposite. Natural winemakers aim to produce wines with a genuine sense of place—wines that reflect where they were grown rather than a predetermined recipe.

Founded by Christos Koulouriotis DipWSET, The Knack Project is one of Greece's most exciting natural wine producers.

Working with old family vineyards around Megara, Christos farms using low-intervention and biodynamic principles. Fermentations are spontaneous with indigenous yeasts, the wines are unfined and unfiltered, and only minimal sulphur is added before bottling.

Papadopoulos Viticulture – Rapsani

On the slopes of Mount Olympus, Papadopoulos Viticulture is helping revive historic vineyards in Rapsani PDO.

The brothers work with old bush vines, spontaneous fermentations, native yeasts and minimal intervention to create wines that reflect the mountain landscape where they are grown.

Haritatos Estate – Kefalonia

For the Haritatos family, low-intervention winemaking begins in the vineyard.

Their vineyards on Kefalonia are dry-farmed, worked entirely by hand and surrounded by orchards, olive groves and native biodiversity. Minimal intervention in the cellar allows indigenous varieties such as Vostilidi and Mavrodaphne to speak clearly of their island home.
